Garlic Bread

Ingredients

  • Italian or French bread, 16 ounce loaf
  • Unsalted butter, ½ cup, softened
  • Garlic, 2 large cloves, smashed and minced
  • Parsley, freshly chopped, 1 heaping tablespoon
  • Parmesan cheese, ¼ cup, grated (optional)

Directions

  1. Preheat oven to 350 degrees
  2. Horizontally cut the loaf in half. Combine garlic, butter, and parsley. Spread butter over the halves of bread and put on a baking pan. Heat for 10 minutes.
  3. Take the pan from the oven and sprinkle cheese, if you want some. Broil for 2 or 3 minutes until the bread edges are toasted. Remove from oven.

Garlic Pasta

Ingredients

  • Kosher salt, 1 teaspoon, plus to taste
  • Spaghetti, 1 pound
  • Garlic Cloves, 3, minced
  • Extra-virgin olive oil, ½ cup
  • Red Pepper Flakes
  • Flat-leaf parsley, 2 tablespoons
  • Lemon, ½ zested, optional
  • Parmigiano-Reggiano, optional

Directions

  1. Boil a pot of cold water then add salt. Cook pasta until tender.
  2. As the pasta cooks, mix the garlic, olive oil, a teaspoon salt and pepper flakes in a skillet and warm. Stir occasionally about 8 minutes or until garlic softens.
  3. Drain the pasta and keep about ¼ cup of the water. Add the pasta and water to the garlic mixture, season to taste.

Garlic Sauce

Ingredients

  • Butter, 1 ½ ounce
  • Onion, chopped finely
  • Garlic Cloves, 2, crushed
  • White wine, 1 glass
  • Salt and Pepper
  • Flour, 1 ounce
  • Milk, ½ pint

Directions

  1. In a saucepan, melt ½ ounce of butter and add the onions and cook until soft. Add garlic and cook for another minute and season with pepper and salt. After adding the wine, turn up heat and cook until volume is reduced by half. Take off the heat.
  2. In a different pan, melt the rest of the butter and add the flour. Cook and stir about five minutes. It’s time to add the milk. You need to add it slowly – add a little, stir, then add a little more. It was look like a pastry, then dough, but as you add the milk, it will become a thick sauce.
  3. Add the onion and garlic mixture.

Garlic Shrimp

Ingredients

  • Olive oil, 1 ½ tablespoons
  • Shrimp, 1 pound, peeled and deveined
  • Salt
  • Garlic, 6 cloves, finely minced
  • Red Pepper Flakes, ¼ teaspoon
  • Lemon Juice, 3 tablespoons
  • Caper Brine, 1 tablespoon
  • Butter, cold, 1 ½ teaspoons
  • Italian flat leaf parsley, divided, 1/3 cup
  • Cold butter, 1 ½ tablespoons

Directions

  1. Using a heavy skillet, heat olive oil over high heat until it starts to smoke. Put the shrimp in one layer in pan and cook without stirring for one minute.
  2. Add salt to the shrimp and stir until shrimp begins to look pink, around one minute.
  3. Add in garlic and pepper flakes. Stir and cook one minute. Add lemon juice, caper brine, 1 ½ teaspoon of cold butter and half of the parsley.
  4. When the butter has melted, turn heat down and add in 1 ½ tablespoons of butter. Stir while cooking until butter has melted and begun to form a sauce and the shrimp look opaque and pink, around two to three minutes.
  5. Using a slotted spoon, take the shrimp from the pan and keep cooking the butter sauce, adding a little water if it seems too thick, for around two minutes. Add salt to taste.
  6. The shrimp is served topped with the sauce from the pan.
